Mom’s sweet cardamom buns – Äidin pulla

Mom’s sweet cardamom buns
3 longs and a few small buns, or a lots of small ones :D

7 dl milk
400 g butter or margarine
1 tbsp salt
3-4 dl sugar
50 g yeast
3 eggs
cardamom and/or raisins, or cinnamon and sugar.
n. 2 kg flour

In microwave oven, melt sugar, salt and butter to the milk so that the end temperature of mixture is about good for the yeast. Add yeast to the mixture, and if you wish to use cardamom and/or raisins, add them too. If you wish to make cinnamon buns, cinnamon and sugar is added in the baking phase. In to the mixture, add flour so that mixture starts to bubble. Then, using your hand to knead, add flour so that you get a dough that is moldable. Put dough in draftless, warm place to rise for at least an hour. After dough has risen, knead off the air bubbles. Form buns out of dough, making them size of half of your fist. You can also braid 3 longs by making first 3 long tubes of dough and then braiding them. Or make cinnamon whirls by rolling dough to a sheet and then spreading some butter, cinnamon and sugar to the sheet and then rolling the sheet to a roll, which is then cut to slices. Brush buns with whisked egg. Decorate buns by sprinkling them with some sugar. If you made small buns, make a dent to them, fill the dent with butter and sugar. Bake big longs in 175 degrees of Celsius for a 30 minutes, small buns and cinnamon whirls in 200 degrees and for a 10-15 minutes.
